As the saying goes, eggs are eggstraordinary. As far as I'm concerned, eggs are the most versatile food on the planet.
You can prepare them in thousands of ways, pair them with ingredient after ingredient - from flour to truffles, and the resulting dish will be stupendous.
You should know, though, that not all eggs are created equal. The quality of an egg is greatly affected by the quality of feed a hen receives, the environment in which it lives, and even the point in the laying cycle in which it's harvested.
I'm glad to know that Land o' Lakes knows all of this and takes it seriously when taking their products to market.
We're about to start a new year - a time when everyone's mind turns to healthful eating after a few months of indulgence.
Eggs are an integral part of healthful eating, full of protein and omega-3s. You can start the new year off right by incorporating eggs into even the very first meal of the new year.
In my family, New Year's Day has been celebrated as long as I can remember with a beautiful brunch. A spread full of fresh fruit, mimosas to drink, and a different egg dish every year.
This year, I plan to make customized egg soufflés for the family. Using my copycat recipe for Panera Bread Baked Egg Soufflés, each one of us will get the toppings we desire, baked up in perfect little heart shaped ramekins.

My signature dish is deviled eggs.
Red Velvet cake or French Silk Pie.
I make an egg bake with veges that is quick and easy to serve. It is a great way to use leftover bread.
My favorite holiday recipe with eggs is eggnog. I pasteurize the eggs by heating them over a pot of water with sugar and milk. I know I can buy pasteurized eggs but doing it this way makes it thicker and creamier.

It would have to be our homemade mac and cheese, which calls for FIVE eggs!
I love making plain scrambled eggs with ham, onions, potatoes, and peppers.
My signature dish for the holidays would have to be deviled eggs. I have to make all diff. kinds for my family - some with, some without onion, same w/ other ingredients. I make a few "Texas" ones to suit my own tastes w/ chopped up nacho pepper slices.
