If there ever was a food that screams “Super Bowl Sunday!” to me, it’s Taco Dip. Otherwise known as Seven Layer Dip, it’s just one of those foods you’d only ever eat at a party, and only ever when you’re being very very bad. I’ll tell you right now I have no desire to know the calorie count on this dip. Given I have it once a year, I think that’s okay.
It’s a definite crowd pleaser, for sure. You’ll want to serve it with tortilla chips (love me some Tostito’s Scoops) and Doritos. DO NOT SKIP THE DORITOS. Something about the spicy flavor of the doritos and the creaminess of the sour cream and guac, well, it’s a party food epiphany right there in your mouth.
The greatest thing about making Taco Dip? No cooking. Not a single thing in this dip requires you to light the stove or dirty a pan.
Start with your cast of characters: Refried Beans, 16 oz. container of sour cream, about the same of guacamole, 4-6 ounces of salsa, shredded cheddar, fresh tomatoes, and sliced or chopped black olives. You may also want to add some chopped onion. I don’t. Raw onion is cringe worthy. I just cringed a little. Yuck.
Use a small casserole dish, or a disposable one. I used a disposable one, because I sent the rest of the dip home with Maggy after our football party, and I hate worrying about getting my casserole dishes back before I need them again.
First, empty and spread the refried beans evenly into the bottom of the casserole dish, making a nice flat layer.
Then, empty your tub of sour cream and packet (or freshly made) guacamole into a bowl together. Stir to combine, then layer evenly on top of the refried beans.
Now, take your freshly made salsa and spread it evenly over the guac-sour cream mixture.
Now dice your tomatoes into a fairly small (bite size, chip-friendly) pieces and layer on top of the cheese.
Finally, open and drain a small (4 oz) can of sliced or chopped olives. Sprinkle across the top of the dip. Voila.
Possibly one of the easiest things you could make to take to a Super Bowl party this year, and certainly one of the most delicious (if not figure friendly). But hey, it’s about time for a little Resolution Revolt, right?
2 cans of refried beans
8-12 oz. guacamole, fresh or store-bought
1 container of sour cream
salsa, fresh or store-bought
1 chopped tomato
cheddar cheese to cover (usually one pre-shredded package)
1 4 oz can of chopped black olives
Layer each ingredient in a disposable casserole dish. Refrigerate until ready to serve.
