Giveaway – Le Creuset Doufeu in Flame

I’m not sure I’ve ever seen a more stunning piece of kitchen equipment as the Le Creuset Doufeu. Seriously – when I took it out of the box, it was art, sitting right there on the stovetop.

You’re probably asking yourself what in the world a doufeu is, and how in the world do you say it? First, let’s start with the pronunciation. A doufeu or Dough-foo is a cast iron French oven made with a special lid specifically designed to baste your food as it cooks.

You see there how the lid is quite large, and has a big “bowl” in the center of it? That bowl is crucial to the Le Creuset genius. The lower part of the pot is like any other Le Creuset you might own – cast iron, covered with enamel, and perfect for searing any of your favorite meats and vegetables.

Where the Doufeu stands apart is in the lid. After you’ve started the cooking process, and you’re simply ready to let everything in the pot simmer, you put the doufeu lid on, and then fill the top of the lid with ice cubes. Yes, ice cubes.

As the food slowly simmers, steam rises to the top of the pot. When the steam meets the cold lid, it turns the steam back into liquid. The lid is dimpled on the underside. The dimples help to evenly distribute the steam-turned-liquid evenly back down onto your food.

Just for a moment, imagine the roast chicken that comes out of this pot.

When Le Creuset sent me the doufeu for review, as I said before, I was a little taken aback at just the beauty of the piece. I almost wanted a second one just so I could put it on a separate shelf and let it look pretty. But this doufeu is all workhorse, and leaving it on a shelf would be a disservice to all the hard work and creativity that went into the creation of the Le Creuset Doufeu.

Did you know the Doufeu is part of the original collection created by Octave Aubecq, one of the founders of Le Creuset? It first debuted with the company in 1934.

Mr. Aubecq was intent on making an enamel color that would stand out among other cast iron pot makers. He created the bright orange-red we Americans know as “Flame” as an homage to the color cast iron turns as it is formed in the heat of a crucible. Here we are, nearly 80 years later, and Flame is still Le Creuset’s number one selling color.

    oh that’s beautiful. Just an interesting note for you, doufeu is pronounced more like doo-fuh. It comes from the french ‘doux-feu’ which means a low heat/flame (literally ‘soft fire’).
    The other item I would add to my kitchen is the 6 3/4 QT. Oval French Oven in Cassis. It’s such a beautiful colour.

    I’ve always wanted a cobalt cocotte or doufeu. I think having a smaller and a larger one would suit my needs just fine. Since my kitchen has mostly blue highlights, they would have to come in cobalt (but if I won a flame one I of course wouldn’t turn it down ;-) ). Let’s go with one 4 qt cobalt cocotte and one 7 1/4 qt cobalt doufeu.

    I really liked the 1 qt au gratin dish. I just love potatoes au gratin and this would make a prettier presentation than my aluminum pan that I usually use. The smaller size would be good for my husband and I since we are empty nesters now. This Doufeau sounds interesting too. I love pot roast and think it would be good for that, and, as you said a roasted chicken.

    The Heritage Collection – 1 1/2 QT. Pate Terrine in Cobalt. I have been looking for the perfect loaf-shaped pan for no-knead bread, and this pan has it all. Cast iron? Check. Long loaf shape? Check. Able to withstand 500F temps? Check. It’s a perfect pan – and a work of art.
