Green Mountain Fair Trade Island Coconut Coffee Cake

You all know that recently I went home to Texas to be with my dad and family while he underwent open heart surgery.

I’ll tell you, nothing makes you want to bake for others more than (stress) and sheer gratitude for the care they’re giving your sick dad.

When I decided I’d bake a cake for the lovely nurses of Methodist Hospital’s ICU ward, I settled on coffee cake very quickly. When you’re baking for a group of folks you don’t know well, coffee cake is the sort of recipe you should go for; easy on the eyes and comforting in texture.

I know that coconut can be a polarizing ingredient. Many people will tell you they quite like the flavor of coconut, but can’t get past the texture. I decided to skip past that issue all together by baking this wonderfully moist coffee cake with Green Mountain Coffee’s Fair Trade Island Coconut coffee.

In the past I’ve made Fair Trade Island Coconut Cookies, and even Fair Trade Island Coconut Chicken Curry, but I think this Fair Trade Island Coconut Coffee Cake is my favorite.

Tropical and sweet, but not overwhelmingly so, Island Coconut is the perfect way to add coconut flavor to your baked goods without adding a new texture.
