Peanut Butter & a Giveaway

Oh, peanut butter. I never realized how much I relied on this super food until I moved to England, where it’s a more recent phenomenon, and very hard to find in its “American” version.

I remember having to buy imported Skippy, a brand I’d never bought when I lived in the States. I also remember sitting in the break room at our tiny converted-country-house office and being ridiculed for choosing peanut butter on toast over a hot bacon roll for breakfast.

I think I really opened my British co-workers up to a world of peanut butter. While I lived there, I regularly had apples dipped in peanut butter for breakfast or snacks, made peanut butter cookies, and almost every day, peanut butter on toast was my breakfast (and sometimes lunch too).

I know that there are people allergic to peanuts (Hi, Tracy! I love you!), but if you aren’t, you really ought to be looking at peanut butter as the perfect breakfast food it is.

To encourage that, the National Peanut Board has created their Peanut Butter Fanatic Facebook page, where you can share recipes, vote for your favorite recipe, and every vote they get, America’s peanut farmers will donate $5 (up to $10,000) to help serve nutritious breakfasts to the hungry.

Making time for breakfast can be hard. But I’ve timed it – my toast takes exactly 97 seconds to get to perfection. While the bread is toasting, I slice an apple or banana for topping. Slathering the bread with a healthy dose of peanut butter takes another 30 seconds, and then topping with apple or banana 15 seconds more.

In a little less than 3 minutes, I’ve made myself a healthy breakfast full of fiber, protein, and more than 30 essential nutrients and phytonutrients.

      I like peanut butter on toast, but it MUST be spread on while the toast is piping hot…so the peanut butter ends up all shiney and melty. Add a glass of milk and I’m a happy camper for breakfast. Yum! 🙂

      My favorite way to eat peanut butter for breakfast is a two-way tie–either slathered on whole wheat toast alongside some scrambled eggs, or stirred into a bowl of oatmeal with some raisins. YUM.

      my papa used to serve us pancakes smeared with peanut butter and maple syrup. it was so good! nowadays, if i eat pb for breakfast, it is usually a huge dollop on a spoon straight from the jar.
