As the saying goes, eggs are eggstraordinary. As far as I’m concerned, eggs are the most versatile food on the planet.

You can prepare them in thousands of ways, pair them with ingredient after ingredient – from flour to truffles, and the resulting dish will be stupendous. 

You should know, though, that not all eggs are created equal. The quality of an egg is greatly affected by the quality of feed a hen receives, the environment in which it lives, and even the point in the laying cycle in which it’s harvested.

We’re about to start a new year –  a time when everyone’s mind turns to healthful eating after a few months of indulgence. 

Eggs are an integral part of healthful eating, full of protein and omega-3s. You can start the new year off right by incorporating eggs into even the very first meal of the new year.

In my family, New Year’s Day has been celebrated as long as I can remember with a beautiful brunch. A spread full of fresh fruit, mimosas to drink, and a different egg dish every year.

This year, I plan to make customized egg soufflés for the family. Using my copycat recipe for Panera Bread Baked Egg Soufflés, each one of us will get the toppings we desire, baked up in perfect little heart shaped ramekins.
